If apple crumble met your morning bowl of yogurt, it would be this dish. Light, comforting and protein packed, the topping can be made ahead of time and used for a few days to make mornings quick and delicious!

Here’s how I made it!

You’ll need a couple apples, some oats, some coconut oil, brown sugar, cinnamon, vanilla and your favourite yogurt. I used plain Greek then drizzled honey on top but you can use vanilla too.

Recipe

Ingredients:

  • 2 apples, peeled and chopped (I used honey crisp)

  • 1 tbsp coconut oil

  • 1/2 cup quick oats

  • 1/2 tsp cinnamon

  • 2 tbsp brown sugar

  • 1/4 tsp vanilla

  • 1/4 cup water

  • 1 1/2 cups Greek yogurt, divided into 2 bowls

  • Honey to drizzle

Directions:

  1. In a dry pan, over medium heat, add your oats and gently toast until golden. Watch them carefully, you only want to toast them lightly and they will burn quickly.

  2. Once golden, add in your coconut oil and stir.

  3. Add your apples, sugar, cinnamon, vanilla and water and cover, simmering for 8-10 minutes or until apples and soft.

  4. Cool and serve over Greek yogurt with a drizzle of honey if desired.

    Note: You can add raisins or nuts to your bowls for extra texture!
