Oat Jam Tart
Here’s how I made it!
Recipe
Ingredients:
1 and 1/3 cups old fashioned oats
1 cup AP flour
1/2 teaspoon baking powder
pinch salt
1/2 cup brown sugar
1 and 1/2 sticks salted butter, cubed (unsalted is fine too)
1/2 cup jam of choice
1/2 tsp vanilla
Directions:
Preheat oven to 350 F.
Grease a tart pan, springform pan or 9x9 inch baking dish
In a bowl, mix all your dry ingredients. In a separate bowl, mix your jam and vanilla extract.
Cut in your butter until well incorporated. Visible pieces of butter is totally fine.
Press 1/2 of crumble into prepared pan and top with a layer of jam. Crumble remaining butter/oat mixture over the top of the jam layer.
Place pan on a baking sheet and bake for 30-35 minutes until golden brown. I suggest checking it at 25 minutes and every 5 minutes thereafter until it’s golden.
Remove from the oven and cool completely before popping the base out of the tart pan.
Slice and serve.
