This delicious tart is made in a tart pan. The sides pop off so you don’t have to worry about lifting the tart slices out. You can slice this like a cake. These bars are chewy, sweet and best of all, uses your favorite jam so it’s super easy. If you don’t have a tart pan, you can use a springform or even a 9x9 dish. You’ll need to keep an eye on it as times will differ.

Here’s how I made it!

First, gather your ingredients. You’ll need oats, flour, baking powder, brown sugar, butter, salt, vanilla and your jam of choice.

Grease your tart pan. If using a baking dish, you can line it with parchment so the whole thing can be easily lifted out and sliced after cooling. Preheat your oven to 350 F.

Whisk your dry ingredients in a big bowl, then using a pastry cutter or even your hands, press the cubes of butter into the dry ingredients until crumbly.

Press 1/2 your mixture into your prepared tart pan.

Mix your vanilla into your jam and spread it around then top with the remaining crumble.

Bake for 30-35 minutes until golden brown. Allow to cool completely.

Pop the tart pan sides off and allow to cool on a wire rack..

Recipe

Ingredients:

  • 1 and 1/3 cups old fashioned oats

  • 1 cup AP flour

  • 1/2 teaspoon baking powder

  • pinch salt

  • 1/2 cup brown sugar

  • 1 and 1/2 sticks salted butter, cubed (unsalted is fine too)

  • 1/2 cup jam of choice

  • 1/2 tsp vanilla

Directions:

  1. Preheat oven to 350 F.

  2. Grease a tart pan, springform pan or 9x9 inch baking dish

  3. In a bowl, mix all your dry ingredients. In a separate bowl, mix your jam and vanilla extract.

  4. Cut in your butter until well incorporated. Visible pieces of butter is totally fine.

  5. Press 1/2 of crumble into prepared pan and top with a layer of jam. Crumble remaining butter/oat mixture over the top of the jam layer.

  6. Place pan on a baking sheet and bake for 30-35 minutes until golden brown. I suggest checking it at 25 minutes and every 5 minutes thereafter until it’s golden.

  7. Remove from the oven and cool completely before popping the base out of the tart pan.

  8. Slice and serve.
