This delicious garlic bread is made by using lots of roasted garlic, butter and a secret ingredient that ensures the perfect golden base for the best part, the cheese!!

Here’s how I made it!

After roasting your garlic, you are going to mix it with butter, seasoning and my secret ingredient, mayonnaise! The mayo will help to achieve the perfect golden toast on the loaf.

You’ll generously spread the butter mixture on your loaf halves and put them under the broiler just until golden, a few minutes at most.

Now add a generous amount of Parmesan and mozzarella and pop it back in the oven (that’s been reduced to 350) until super melty. Top with parsley if desire, but we leave ours plain!

Recipe

Ingredients:

  • 1 Italian or French loaf, halved.

  • 2 heads of garlic

  • 2 tbsp EVOO

  • Pinch salt

  • 1 stick butter, softened

  • 2 tbsp mayonnaise

  • 1/2 tsp smoked paprika, onion and garlic powder

  • 8 ounces mozzarella, grated

  • 1/4 grated parm-reg

Directions:

  1. Cut the tops off the heads of garlic, add a tbsp of EVOO to each along with a sprinkle of salt and wrap in aluminum foil. Roast at 375 F for 45 mins until super soft. Allow to cool a bit.

  2. Turn your broiler on and make the garlic butter by adding the roasted garlic cloves to your butter and mayo, then mix well with the seasoning.

  3. Spread the butter on both sides of the loaf and broil just until golden. Remove from the oven and turn the heat down to 350 F.

  4. Add your cheeses and put the bread back into the oven until the cheese is completely melted. Top with parsley if desired.
