Smokey Sausage Sheet Pan Dinner
One pan meals are where it’s at. Line a sheet pan with parchment paper, throw a bunch of veg and meat and season it with a heavy hand and a drizzle of olive oil. Toss it in the oven and you have an oven to table meal with minimal cleanup and guaranteed happy tummies!
Here’s how I made it!
First, gather your ingredients (there aren’t many!)
You need a package of your favorite sausage, along with mushrooms, peppers, red onion, your favorite olive oil, and some dried herbs and spices.
Chop everything into equal sized pieces and add to a bowl.
Add in your seasonings and olive oil and toss well.
Toss everything onto a parchment lined sheet pan and roast in the oven for 30 minutes. Sprinkle with Parmesan-Reggiano if desired and serve!
Recipe
Ingredients:
1 package of smoked sausage, pork, chicken or whatever you like, cut into 1 inch
slices
½ each red, yellow, orange and green pepper, cut into 1 inch pieces
2 cups of halved cremini mushrooms
½ red onion, cut into 1 inch pieces
3 small potatoes, peeled if you like, cut into 1 inch pieces
3 cloves garlic, minced
1 tsp each onion powder, oregano, smoked paprika
Salt and pepper to taste
Red chili flakes for heat if you like, to taste
3 tbsp your favorite EVOO (I used pepperoncino for the spice so I omitted the red
chili flakes)
¼ cup grated parm-reg (optional)
Directions:
Preheat oven to 400 F and line a baking sheet with parchment paper.
In a bowl, toss all of your ingredients.
Spread onto the sheet pan and bake for 30 minutes until potatoes are cooked through.
Remove from oven and immediately sprinkle with parm-reg.
