Brown Butter Shortbread Bars
Here’s how I made it!
Recipe
Ingredients:
1 cup butter, browned and then allowed to solidify to room temperature
1 cup confectioners sugar
1 tbsp good quality vanilla extract
1 3/4 cup AP flour
1/2 tsp salt
sparking sugar, sprinkles or flaky salt
Directions:
Grease 2 8” loaf pans and line with parchment paper. Preheat oven to 300 F.
Beat your sugar and butter on medium high with the paddle attachment until light and creamy. Add vanilla extract.
Sift your dry ingredients then add to the butter mix. Mix until combined but resist the urge to overmix. You will be pressing the dough into a pan so it will come together as it bakes!
This will give you about 3 cups of shortbread dough. Divide the mix into both loaf pans and press the dough down evenly. You can use the bottom of a measuring cup or an offset spatula if you want. Poke holes all over using a fork. This will stop the dough from deforming as it bakes.
After an hour, when golden brown, remove the pans from the oven and allow to cool on a rack for just about 15 minutes (no longer!)
Lift the bars up using the sides of the parchment paper and move to a cutting board.
Using a very sharp knife, slice them into whatever size bars you like. I cut 8 across and then cut those in half for 16 bars from each loaf pan.
