Citrus Salad with Honey, Lemon & Mint Dressing
Here’s how I made it!
Recipe
Ingredients:
Field greens, or a mix of your favorite lettuce(s), spinach, kale or whatever you have/like
3 medium to large sized citrus fruits, such as oranges of any variety, grapefruit and mandarins
mint leaves
1 lemon, juiced (about 2 tbsp juice)
1 tbsp red wine vinegar
1 1/2 tbsp honey
1-2 tsp of fresh mint leaves, chopped
1/3 cup EVOO
salt to taste
Directions:
Arrange your greens in a bowl.
Slice your citrus fruits by peeling the fruits with a knife and discarding the peel and pith.
Arrange oranges and a few mint leaves on the salad.
Whisk lemon juice, red wine vinegar, honey, mint leaves, EVOO and salt. Adjust honey and or vinegar depending on how tart you like your dressing.
Serve salad in individual bowls, drizzle with dressing and serve.
