Citrus Salad with Honey, Lemon & Mint Dressing

Slice up a variety of oranges and other citrus, and arrange on a bed of greens. The dressing is on the sweeter side to compensate for the tart varieties of citrus, like grapefruit and blood orange, but the flavors all come together with the addition of fresh mint to make this bright salad the perfect side to grilled meats and fish.

Here’s how I made it!

Arrange your favorite greens in a big bowl and set aside. Meanwhile, carefully slice your citrus but cutting off the tops and bottoms, then carefully run a knife down the sides to take off the peel and the pith.

Slice into circles and set aside. You can use oranges of any variety. I like to use blood oranges when they are in season, along with Cara Caras, mandarins and grapefruit.

Arrange your oranges on the greens and add in some mint leaves for garnish (and flavor!)

Now, make your dressing by combining lemon juice, red wine vinegar, honey, mint leaves, salt and EVOO. Whisk to combine well then dress your salad in individual serving bowls.

Recipe

Ingredients:

  • Field greens, or a mix of your favorite lettuce(s), spinach, kale or whatever you have/like

  • 3 medium to large sized citrus fruits, such as oranges of any variety, grapefruit and mandarins

  • mint leaves

  • 1 lemon, juiced (about 2 tbsp juice)

  • 1 tbsp red wine vinegar

  • 1 1/2 tbsp honey

  • 1-2 tsp of fresh mint leaves, chopped

  • 1/3 cup EVOO

  • salt to taste

Directions:

  1. Arrange your greens in a bowl.

  2. Slice your citrus fruits by peeling the fruits with a knife and discarding the peel and pith.

  3. Arrange oranges and a few mint leaves on the salad.

  4. Whisk lemon juice, red wine vinegar, honey, mint leaves, EVOO and salt. Adjust honey and or vinegar depending on how tart you like your dressing.

  5. Serve salad in individual bowls, drizzle with dressing and serve.
