This 30 minute meal tastes like it’s been simmering for hours. It’s loaded with spicy tomatoes, sausage and finished with Tuscan kale. You can use spinach or a regular variety of kale if that’s what you can find. I used canned spicy red pepper tomatoes but you can use any variety. I also added in some extra shredded leftover chicken I had on hand but that’s totally optional.

Recipe

Ingredients:

  • 1/2 lb orecchiette

  • 1/2 lb Italian sausage, mild or spicy from 2 italian sausages, casings removed

  • 1 onion, finely diced

  • 3 cloves garlic, minced

  • 2 cups canned spicy red pepper diced tomatoes, or just regular diced tomatoes

  • 2 tbsp tomato paste

  • Salt and pepper

  • 1 Parmesan rind if you have

  • 4 cups chicken broth

  • 1/2 cup cream

  • 1/2 bunch Tuscan kale, also known as Dinosaur Kale, or any variety

  • 1/2 tsp red pepper flakes

  • Ground pepper for serving

Directions:

  1. In a big pot, heat a couple tablespoons of oil in a pot and add your sausage. Season with a little salt and pepper.

  2. After it’s browned, about 5-6 minutes, add in your onions and garlic and cook for a minute.

  3. Add in your tomato paste, cook it for a minute then add your parmesan rind if you have one, diced tomatoes, broth and bring to a boil. Turn heat down to medium, until just simmering.

  4. Once it boils, add in your orecchiette and set your timer for 3-4 minutes LESS than the pasta package ingredients.

  5. When your timer goes off, add in your cream, adjust for salt if necessary, and add in your kale.

  6. Remove off the heat, take out the parmesan rind, and serve with more pepper and red pepper flakes.
